Vegan cauliflower soufflé

I found this wonderfully delicious recipe the other day. I tried, tweaked and tested to my taste and I think it is definitely worth sharing, so you can give it a try.

Vegan cauliflower soufflé – Ingredients:

  • 1 cauliflower
  • 1 onion
  • 4 cloves of garlic
  • 1 red pepper
  • 2 tomatoes
  • 3 carrots
  • 1 smaller zucchini
  • 3 tbsp. rice or oat flour (almost any kind of flour will do)
  • 3 eggs or egg substitute
  • plant based cheese on top

Vegan cauliflower soufflé – Preparation:

Boil or steam the cauliflower fully, then mash it, as if you’d make mash potatoes. Add the
eggs (substitutes), flour and salt the lay the mash into an oiled baking dish.
Sauté the chopped onions with the garlic, add the chopped carrots and other veggies and
sauté. Add some water if necessary. Season to taste, add rosemary and some mint to give it
an interesting turn.
Layer the sautéed veggies on top of the cauliflower mash evenly. Top it off with some plant
based cheese and put it into the pre-heat oven for 20 minutes or so, until the cheese melts.
